Feijoa Cake

Feijoa cake

½ cup milk 2 eggs 1 cup brown or raw sugar 1 cup mashed feijoas 1 tsp vanilla essence 75 gm butter 2 cups flour 1 tsp cinnamon or mixed spice to taste 1 tsp baking powder 1 tsp baking soda

  • melt the butter
  • stir in the feijoa
  • stir in eggs and vanilla essence
  • warm the milk and add the baking soda and add to mixture
  • sift the flour and baking powder into the wet ingredients and mix
  • pour into a greased and baking paper-lined 20cm cake tin
  • bake at 180°C for 50 minutes.
  • ice with cream cheese icing if wished

Cream cheese icing

200 gm Cream Cheese 200 gm Icing Sugar 1 Tblspn butter some lemon juice

  • beat cream cheese until soft
  • add icing sugar, lemon, and butter
  • blend until smooth
