1 kg medium sized potatoes
1 litre water
salt
butter for frying

* One day before par boil the unpeeled potatoes in salted water till just firm.
* Peel the potatoes and grate coursely. Sprinkle with one tsp of salt.
* In a non stick frypan melt a knob of butter on a medium heat and add the potatoes
* Turn them over from time to time for about five minutes
* Arrange evenly to form a flat cake over the bottom of the pan
* Turn the heat to low and cook for 15 minutes
* Turn the cake upside down onto a plate and serve
