1 kg medium sized potatoes
1 litre water
salt
butter for frying
- One day before par boil the unpeeled potatoes in salted water till just firm.
- Peel the potatoes and grate coursely. Sprinkle with one tsp of salt.
- In a non stick frypan melt a knob of butter on a medium heat and add the potatoes
- Turn them over from time to time for about five minutes
- Arrange evenly to form a flat cake over the bottom of the pan
- Turn the heat to low and cook for 15 minutes
- Turn the cake upside down onto a plate and serve
