Tangy Lemon Squares
1 cup of flour
125g butter (chilled)
cup icing sugar
- Put all of above in food processor and process until crumbly (when you put the butter in cut it up a bit).
- Press mixture into greased slice tin.
- Bake in oven (180 degrees) for 15-20 minutes until golden and dry.
While base is cooking combine:
3 eggs
grated rind and juice of 3 lemons
2 tablespoons flour
teaspoon baking powder
1 cups caster sugar
- Pour mixture over the hot base and return to oven for 25-30 minutes until set.
- Leave to cool before cutting into pieces.
- Dust top with icing sugar if you wish.
