Lemonade
6 lemons, washed
1.5kg white sugar
50g citric acid
3 litres water
- peel the rind off 3 lemons, outer skin, no white pith
- place peel and 2 cups of the sugar in a food processor
- process until the rind is fully ground up and the sugar is yellow and oily looking
- tip into a large saucepan
- squeeze all 6 lemons and strain to remove pips
- add the lemon juice to the lemon sugar mixture in the saucepan
- add the remaining sugar and the citric acid
- add the 3 litres of water
- heat over a medium heat, stirring until the sugar dissolves
- cool, pour into clean bottles
- store concentrate in the fridge
To serve, dilute with water 1 part cordial to 3 or 4 parts water.
To make fizzy lemonade, dilute with sparkling mineral water or soda water.
