Bean Salad
 
425 g tin 4 bean mix, drained
250 g green beans
½ cup balsamic vinaigrette
½ red onion, finely sliced
100 g crumbed feta, optional
¼ fresh basil or parsley
½ cherry tomatoes, halved
 
- blanch green beans for 2 to 3 minutes, cooling quickly
 - chop beans into 2 to 3 cm lengths
 - toss bean mix, green beans, and vinaigrette in a bowl
 - marinate
 - add tomatoes, onion, and sprinkle feta and herbs over before serving
