Feijoa Pudding

Feijoa Pudding

1 cup feijoas peeled and chopped 1 cup flour 1 tsp baking powder cup sugar 1 egg 3 oz butter melted tsp lemon rind (optional)

  • combine flour and baking powder and sugar in a bowl
  • combine beaten egg and melted butter in another small bowl
  • add the egg and butter mixture to the dry ingredients all the while mixing it in
  • continue mixing until it is all mixed in and then add the feijoas
  • bake in a covered oven dish, which has been lightly greased with butter, at 180°C for 30 mins
  • remove lid and bake for another 5-10 mins until top is light brown and bounces back when pushed down and sides are just shrinking from sides of dish

Serves 4 to 6
