Date And Feijoa Cake

100 g softened butter cup sugar (150 g) 1 egg 1 cups flour (250 g) 1 tsp baking powder 1 tsp baking soda 1 cup chopped dates 1 cup mashed Feijoas 2 tblspn milk

  • preheat oven to 180°C
  • grease a 18cm square tin and line the base with baking paper
  • beat butter and sugar until light and creamy
  • stir in egg
  • sift flour, baking powder and baking soda
  • fold dry ingredients into creamed mixture
  • stir in dates, feijoas, and milk
  • place mixture into tin and bake for 45 minutes, or until a knife inserted in the centre of the cake comes out clean
  • leave tin for 10 minutes before placing on a wire rack to cool
  • when cool ice with lemon icing and garnish with lemon zest
