Soft Flour Tortillas

(pronounced tor-tee-yas)

  • heat in frying pan or under grill, apprx 6 seconds
  • heat in microwave, approx 6 seconds each, or 45 seconds for 8
  • wrap in foil and heat in preheated oven at 180oC for 10 minutes
  • Breakfast: roll up with fried or scrambled eggs, bacon
  • Lunch: cheese and ham; prawns and mayonnaise; seasoned chicken, beef, or prok with tomayoes, letuce, mayonnaise
  • After school: baked beans; spaghetti; cheese
  • Dessert: sliced strawberres and cream or fromage frias, dusted with castor sugar and cinnamon


(pronounced fa-heetas) serves 4

  • 450gm boneless chicken,
  • Fajita seasoning mix,
  • 3 tblsp oil,
  • 1 large onion,
  • 1 green and one coloured pepper sliced,
  • salsa, sour cream,
  • 8 tortillas

Coat chicken, onion, and peppers with two tablespoons of oil. Cook onions and peppers over a high heat in a heavy based frying pan for 5 minutes until beginning to brown. Remove from pan. Sprinkle seasoning mix over the chicken, add to pan, and stiry fry for 5 minutes until meat fully cooked. Add onions and peppers and quickly fry until heated through. Spoon into centre of warmed tortillas together with 2 or 3 teaspoons of salsa and soured cream, roll.


(pronounced kay-as-de-yas) starter or light lunch
For each quesadilla: 1 tortilla, 40gm grated cheese, 10gm chopped spring onion, mexican sauce or salsa

Spread sauce or salsa over half the tortilla, add cheese and spring onions and fold in half to form a D shape. Cook until cheese melts and tortilla turns lightly golden brown - about 2 minutes per side. Cut into triangles and serve with guacamole and soured cream


(pronounced en-chee-lah-dahs) serves four

800gm filling (Chilli con carne, shredded chicken, cheese and onions),
Enchilada sauce,
100gm grated cheddar cheese,
Sour cream and chopped onions to granish
  • Divide filling between tortillas, and roll.
  • Please in a shallow casserole dish.
  • Cover each tortilla with enchilada souce and top with cheese
  • Bake in preheasted oven 180oC for 25 minutes or microwave for 5 minutes.
  • Garnish and serve with a tossed green salad
