250 gm cream cheese
2 lemons
1 cup castor sugar
1 lemon jelly
1 can evaporated milk - chilled
6 oz butter
1 pkt wine biscuits
optional -  tsp mixed spice or cinnamon
 
- crush biscuits, mix in melted butter and line dishes with base mixture
 - mix cream cheese and sugar
 - dissolve jelly in ⅔ cup of boiling water, add juice from lemons and add to cream cheese mix
 - beat evaporated milk till thick. Fold in cream cheese and jelly mixture
 - set in fridge
 - add topping once set if desired
