Chocolate Brownies

175g walnuts or pecan nuts 115g plain chocolate 175g butter 340g caster sugar 1 teaspoon vanilla essence 3 eggs 115g/ plain flour 1 level teaspoon baking powder

A baking tin 22x30cm (9x12in.) and 2.5cm (1in.) deep

  • Preheat oven to 180°C
  1. grease the baking tin
  2. line baking tin; put it onto baking parchment, draw around the tin, cut out the shape and put it in the bottom
  3. put the nuts into a clean plastic bag and roll a rolling pin over them to crush them into pieces
  4. break the chocolate into pieces and put it into a heat-proof bowl
  5. stand the bowl over a pan of simmering water
  6. cut the butter into pieces and add it to the bowl
  7. stir the butter and the chocolate until they melt
  8. pour the melted chocolate and butter into a mixing bowl
  9. stir in the caster sugar and vanilla essence
  10. whisk the eggs in another bowl
  11. beat whisked eggs into the chocolate mixture bit by bit, using a wooden spoon
  12. sift the flour and baking powder into the bowl and add the pieces of nut
  13. mix everything together well
  14. pour the mixture into the baking tin and smooth the top of it with a knife
  15. bake it for about 40 minutes
  16. allow the mixture cool a little, then cut the brownies into squares.
  17. leave brownies on a wire rack to cool
