Brigitte's Crackers

½ cup wholegrain oats (or jumbo oats or oat bran) 1 ¾ cups flour ½ cup Sesame seeds 1 tsp baking powder ½ cup Linseed 2 tsp salt ½ cup Sunflower seeds 1 cup water ½ cup Pumpkin seeds ½ cup olive oil 3 tsp Thyme (optional) 3 tsp Sprinkle of salt before baking (optional)

  • preheat oven to bake 200° C
  • mix all ingredients – makes quite a wet mix
  • divide into ~4 to 6 parts (depending on tray size)
  • roll out thinly between 2 sheets of baking paper
  • leave on the lower sheet of baking paper and use a long knife to press down into dough to mark where it will later be brokeninto pieces
  • bake 200° C on a simple baking tray for 20 to 35 minutes, rotate the trays if necessary to get an even colour
