Potato SaladRecipe nameingredients
Serves 4 600g potatoes, little gourmet ones are nicest, cooked 1-2T chopped chives 1/2 cup mayonnaise, I used Heinz brand 3T vinaigrette, either homemade or otherwise (see below for recipe) 2 rashers cooked and chopped bacon (optional) 2 spring onions, chopped (optional salt and pepper Basically just slowly mix it all together, but add the mayonnaise first, then mix, then the vinaigrette. To make a quick vinaigrette, put 1 smashed clove of garlic, 2 T of white wine vingear, 1t dijon/wholegrain mustard, 5-6T olive oil, some parsley and thyme and mix together by shaking in a jar. It will make more than you need! But a commercial vinaigrette will work just as well. |
