Tangy Lemon Squares

Tangy Lemon Squares

1 cup of flour 125g butter (chilled) ½ cup icing sugar

  • Put all of above in food processor and process until crumbly (when you put the butter in cut it up a bit).
  • Press mixture into greased slice tin.
  • Bake in oven (180 degrees) for 15-20 minutes until golden and dry.

While base is cooking combine:

3 eggs grated rind and juice of 3 lemons 2 tablespoons flour ¼ teaspoon baking powder 1½ cups caster sugar

  • Pour mixture over the hot base and return to oven for 25-30 minutes until set.
  • Leave to cool before cutting into pieces.
  • Dust top with icing sugar if you wish.
