Easy Feijoa muffins
75 gm butter
1 cup chopped feijoa
2 eggs
¾ cup sugar
2 tsp baking powder
2 cups flour
milk to mix (or fresh lemon or orange juice)
Topping
1 tsp cinnamon
1 Tblspn brown sugar
- cut feijoas in half and scoop out flesh with a spoon and overfill a cup
- cut feijoa flesh into pieces so cup is packed
- melt butter in a bowl
- add feijoa and stir
- add unbeaten eggs and combine
- fold in dry ingredients
- add liquid to achieve a soft consistency
- spoon into muffin pans
- mix cinnamon and sugar topping and sprinkle over muffins
Bake in 200° for 10 to 15 minutes.
Makes 12 standard, or 24 mini muffins
